This was a huge hit yesterday....my mom didn't even notice it wasn't potatoes until one of my kids told her ;)

Ingredients
- 2 medium head (5-6" dia) Cauliflower, raw
- 1-1/2 cups Mayonnaise, regular
- 4 medium slices(yield after cooking) Bacon or side pork, fresh, cooked - crumbled
- 2 medium stalk (7-1/2" - 8" long) Celery, raw - diced small
- 1 teaspoon Mustard
- 4 large Egg, whole, boiled - chopped up
- 4 tablespoons dill relish
- 1 cup, chopped Onions, yellow, sauteed
- Chop up the cauliflower heads and place in pot of water to boil. Boil until fork easily pokes into.
- Drain cauliflower very well, if you do not it will make everything soupy
- Put cauliflower in a big bowl & mix in all the rest of the ingredients. Salt & pepper to taste.
- Chill in fridge for a few hours then serve :)
