My Weekly Menu for this Week

I've been low carbing for the past 2 weeks and have lost about 12 pounds so far of the 30 I need to lose to get back to my goal.  The best things besides the weight loss?  My blood sugar is stable, I'm not having as many mood swings and my period is more predictable (yeah, tmi but it is my blog lol).

My plan is pretty much stay within the same carbs I'm taking in now, which is about 20 a day until I get used to the idea of LCHF.  It's hard to switch your mind frame from low fat to this....very hard but I do understand the science about it.

This is my dinner menu...all days are subject to be switched around if I feel like it lol:

Monday:  Taco Stuffed Zucchini

Tuesday:  Florentine Chicken Alfredo with added Zoodles (zucchini cut into the shape of pasta)

Wednesday: Crockpot Chicken Cacciatore with added Zoodles

Thursday:  Beef Stroganoff with added "riced" cauliflower

Friday:  Shrimp Scampi with added Zoodles

Saturday:  Grilled meat and veggies

Sunday:  Crockpot beef roast with veggies

For my lunches I'm going to try to make these so I can have a hamburger, and pair it with a small salad :)  I premake hamburger patties on Sunday so I can just heat it up during the week.

My breakfasts are pretty much the same as always....3 whole eggs with cooked veggies mixed in.  The only thing I've added are 2 pieces of bacon and a little bit of butter.

Snacks are stuff like hardboiled eggs, cut up veggies and dressing, and cheese.

For me I need to have an idea what to eat each day, it helps me stay on a budget and not obsess about wondering what I'm going to put in my mouth throughout the week.  Nothing is set in stone and if I wind up with plenty of leftovers we'll usually do a leftover night but my kids eat like a plague of locusts lol

All I know is I will make my way back to my goal.  :)
