Spinach, Bacon & Egg Muffins

These are so easy to make!

I make them in big batches so I can just warm them up & go in the mornings.

So what do you need?

This batch made 9 egg muffins....
8 whole eggs
1 cup cooked spinach
4 slices of bacon, cooked & chopped

Spray the muffin tin with Pam (liners I find don't work well at all) and fill up each cup 3/4 of the way.  

Put in the oven at 375 for about 20-30 minutes.

Get creative with them!

  1. I am definitely going to make these! I found some really great silicon muffin pans that I want to try.

  3. This may be a stupid question, is this a big muffin pan or small muffin pan? I am, like most everyone on here, on a weight loss journey. I have lost 27lbs,I have 70 to go. Just trying to find some things that are different, its getting boring eating the same stuff. Even though I know they've worked thus far. Thank you for your Iinspiration and for being so open with every thing.
