Anyone want to sponsor my racing habit? I'm only half kidding lol

I love running.

It's an addiction I never thought I would ever have.  Not saying it's a bad thing either.

When I run I can push all of my problems out of my head.  Focusing on my breathing, feeling the cadence of my feet hitting the pavement, listening to either nature or my is just something that makes me feel inner peace.  It also makes me question my sanity lol

It leads to my love of races.  I met the most amazing people out there on the course.  Cancer survivors, people that are battling weight loss, kids following their parents footsteps....and so many more stories!

Races also help me push myself.  I know with the CCC I hadn't run in what seems like forever, didn't train and I still did a decent time.

Now my only problem is there are soooooo many races I want to participate in but with buying a new house I need to be a bit selective.  It's either that or try to find a sponsor.  So in an off chance a business is reading this....would you like to sponsor me?  lol

Crazy that I'm even talking about this.  It's hard to explain but never in my life up until I started to get healthy was running ever a thought in my mind unless something was chasing me to kill me.

Like this.  Which is totally creeping me out right now....I don't think I'll come back and reread this entry very much lol

I'd still totally run from clowns.  I might even be able to channel my inner Kenyan and win a race instead of being in the back of the pack!  haha!

In a bit of thoughts are with the victims of the Boston Marathon bombings.

  It has made me even more proud to be part of the running community.  <3

Menu for the week :)

Let me run down this week's dinner menu before I forget to post it lol 

Sunday - homemade grilled Turkey burger with salad

Monday - Left over night....the burgers and WW chicken soup

Tuesday - Crockpot Chicken Taco Chili

Wednesday - Shrimp and veggie stir recipe.  Just a pound of shrimp, some frozen asian veggie mix I picked up at Sam's and some soy sauce :) 

Thursday - Leftovers again from Tuesday and Wednesday.  My husband is leaving on this day for probably a week so I don't have him as a hoover lol

Friday - Weight Watchers Chicken & Dumplings

Saturday - Stuffed Pepper Soup

Sunday - Slow cooked beef roast with veggies and cauliflower rice

Meet Heidi :)

Your name & age?  Heidi, 40

What made you decide to change? I was trying to get off the floor after changing my son's diaper and I couldn't do it without first setting him down.  It broke my heart to realize I wouldn't be able to toss a baseball/football/ride bikes with him.  I KNEW I had to change.

How did you do it?  I have tried a little bit of everything:  weight watchers, low/no carb, Whole30, Paleo, gluten free, work and online Biggest Loser challenges and hours and hours at the gym.  My recipe for success is determination and never giving up.

 What was your biggest challenge? My battle is and will remain my love/hate relationship with food.  I am a serious emotional eater.  I am trying to become more conscience about why I am eating.  This will be my 'cross to bear' for the rest of my life, although I do believe the cross is becoming lighter and lighter.

What is your biggest piece of advice to someone who is just starting?  Never, never, never give up.  Even when it feels like you aren't making progress, you are.

My Healthy Gumbo Recipe & Cauliflower Rice


Tanee's Seafood Gumbo

PAM or sprayer of olive oil

1/2 c whole wheat flour

4 stalks celery, chopped

2 medium onions, chopped

1 green bell pepper, chopped

2 cloves garlic, minced

1 quart chicken broth

1 quart water

1 teaspoon hot sauce

1 teaspoon salt

1/2 pound turkey smoked sausage, diced

1 bay leaf

3/4 tsp dried thyme

1/4 tsp red pepper flakes

2 pounds peeled medium shrimp

1 pound lump crabmeat

1 12oz container of oysters (small if you can), undrained

Gumbo File (optional...I normally don't use this because I always forget to buy it lol)

Spray olive oil or Pam on bottom of a cookie sheet, spread flour evenly over cookie sheet, spritz with olive oil or pam.  Set oven on broil.  Cook flour in broiler until the desired color (caramel) it carefully or it will burn.  Transfer into dutch oven or stock pot, set aside.  This is your healthy Roux Louisiana gals!

Spritz a saute pan and add celery, onions, bell pepper & garlic.  Cook until onions turns transparent.  Add to dutch oven.

Add broth and next ingredients (stop at the red pepper flakes), bring to a boil.  Reduce heat and simmer, uncovered for 2 hours, stirring occasionally.

Add shrimp, crabmeat and oysters and cook for 15 mins.  Enough time for the shrimp to turn pink and the oyster edges curl.  Remove from heat, and stir in gumbo file, if desired.  Discard bay leaf.  Serve over cauliflower rice. 

How to make cauliflower rice:

It's super super easy!  All you need is a head of cauliflower chopped in chunks small enough to fit in a food processor, a food processor, 1 tbsp of olive oil, and salt & pepper to taste.

You are going to put the cauliflower in the food processor and you are going to see it turn into almost like rice size bits, put it in a skillet with the olive oil and saute it for about 4-5 mins until al dente.

Season it if you want with the salt and pepper.

What made you decide to change? 

Starting a family has been my priority since getting married in 2009. Being overweight has cause medical issues and infertility. After two years of trying with lots of doctors, hormones, tears and a diagnosis, I decided the best thing I could do for myself was to get healthy and do this the right way. 

How did you do it? 

I started the Take Shape for Life program with Medifast on October 9th 2012. 

What was your biggest challenge? 

Taking the leap. I had to take a lot of me time to reflect on the reasons why I was making this choice. It took me 9 days to fight all my demons and make the commitment to myself to do this and see it through. 

What is your biggest piece of advice to someone who is just starting? 

Don't jump into it. Really take time to make sure you're doing it for the right reasons. Be your first priority. Do it for yourself. Commit fully and don't look back. 

Do you have a fan page or blog? 

I have a long way to go (I need to lose 105 more lbs to get to my goal) but here is me at my starting weight of 307 lbs and now 42 lbs lighter after 11 weeks :)

Las Vegas, House Hunting, Crescent City Classic, The Today Show, Oh My!!!

I know, I know....I haven't been updating here like I should.  I swear I've been busy!

So we've been house hunting forever.  We need to move to a better school district.  I hated homeschooling my oldest son so we let him go live with my mom to go to school over in Slidell.  We finally found a house last week and made an offer on it, they accepted and so now goes the long process of the rest of it.  Now I really just need to concentrate on packing where we are now.  Fun, fun ;)

Now on to Vegas!!  Oh. My. Gosh.  I had a blast there.  The food, the dancing, the tons of walking.  I think it all balanced out lol

I went for our Slumber Parties Convention.  So it was kind of business related ;)

Next up is the Crescent City Classic!  It's a 10K (6.2 miles) through New Orleans.  I DID NOT train for it at all.  My legs are still hurting today.  Over all it was a really fun race.  I mean if nothing else I did it for the free shots, free beer and the military bands playing NOLA music!

I am all signed up for next year.  I hope to see some of you join me!

Finally....I had the pleasure of going on the Today Show and became the newest member of the Joy Fit Club (  What an awesome experience!  Yes, they should have told me to count to 2 or 3 then turn and talk to Hoda and Kathie Lee.  But overall I loved meeting Joy.  She is a super nice person :)

Me and Joy Baeur....she is so tiny next to me and my 5'8" 160 pound self lol
