My Dinner Menu for 12/30- 1/5 and Low Carb Ramblings

I've been low carbing it since the day after Christmas because of my blood sugar getting way too high and my doctor mentioning something about my insulin resistance getting worse.  Which is crazy.  I have pcos and this is the main symptom besides irregular painful periods...TMI, sorry.  Sometimes I forget I have pcos.  This is why I never really mention it.

This low carb thing is totally new to me so I wound up buying the new Atkins book.  Which is a far cry from the book I read 10 years ago. I'm not used to using full fat food any more.  This is the cleanest I've ever eaten & surprisingly my cravings are going away.  No I'm not saying to rush out and start doing Atkins lol 

I'm still going to WW meetings, btw.  Ironically after the meeting last week I was talking to a lady and she low carbs too. 

The good side is that my energy has picked up and my blood sugar is leveled out.  Plus I've lost more weight which is cool. 

Am I going to stay low carb?  I don't honestly know.  I haven't even said anything about it on my fan page....so you heard it first here ;)

Saturday:  Baked Salmon with EVOO, garlic & Italian herbs and saut√©ed asparagus (starch side for the rest of the family)


My breakfast consists of 2 whole eggs, canned spinach and 3 turkey b-fast sausage links or 3 slices of regular bacon....I didn't really change much to this except I am eating real bacon lol

Lunch is a pan "fried" in a tbsp. of olive oil chicken breast that is boneless & skinless with Zatarain's seasoning and steamed veggies....I need to explore other options :) It is yummy but I want quicker stuff.

  1. You need to read the book Practical Paleo by Diane Sanfilippo. The first half of the book is dedicated to health issues like PCOS, Thyroid, All Autoimmune, Blood Sugar levels, etc.. She really lays it all out there. It is as much a heath book as it is a cookbook. She gives 30 day meal plans for whatever condition you are dealing with. You should look at her website as well, It has a lot of great info.

  3. I do low-carb and follow WW. Been doing it this way since the beginning of my weight loss. Well, maybe I shouldn't say "low carb" since I eat fruits, veggies, beans, but I eat virtually NO grains, pasta, breads, etc...

    I couldn't do paleo. I love beans too much. And I don't eat mammals either. ;)

  4. I have been following the core plan and tracking....the only thing I'm not eating now is fruit, nuts and grains. I want to add the fruit and nuts slowly back though :)

  10. I love that you do a weekly meal plan. I HAVE to start doing this! I'm usually staring into the fridge with a "deer in the headlights" look at 4pm! I also didn't know that Skinnytaste had a low carb section, thanks! Peace love and low carb has some amazing recipes! You should try her avocado-feta salsa, it's SO good. I had it for dinner tonight with grilled chicken. Delicious! The recipe is listed under "Chili-Lime Grilled Prawns w/ Avocado-Feta Salsa". I've never tried it with shrimp, but you can't go wrong with shrimp, right?!

  11. Look at Paleo--not Atkins. Check out book: Wheat Belly. Fresh organic whole foods sustainably grown would be best :-)

  12. I did Atkins a few years ago and lost about 40 lbs. I stopped doing it because I was feeling "overloaded"--know no other word to explain. Last year, I went primarily plant based and that works for me. I keep it low carb in the sense that I don't eat a lot of pasta, rice or bread. I do have beans but healthy. Brennan's(NOLA restaurant) put out a cookbook once and there are some New Orleans themed low carb cookbooks out there. Pretty good. If I ate meat, I would consider going back on on Atkins. You need to do what works for YOUR body...only you know your body. :)

  13. I'm taking baby steps. I knocked out all the processed sugars in 2011, but I still love potatoes and pasta and bread. Switched to dreamfield low-carb pasta and have been limited my bread and potato intake since I started strength training (higher protein, lower carb diet needed). Hope it makes a difference. Great post!!!
